OPTIMIZATION OF THE ASSORTMENT IN THE BAKERY INDUSTRY

Bread and bakery products belong to the goods of strategic importance and are for citizens the products of basic necessity and constant demand. The aim of the work is to study the assortment and make proposals for its optimization at the enterprise LLC "Melnik" in the Omsk region. The work used the analytical method and the method of constructing the matrix of the Boston Advisory Group (BCG). As a result of the study, the analysis of the actual assortment at the enterprise was given, it was proposed to expand the assortment of the enterprise by introducing new types of pastries (puffs and pies), and the calculation of the economic efficiency of the proposed event was carried out. Thus, the implementation of measures to expand the range of products manufactured by Melnik LLC is seen as an effective investment of funds. The expected proceeds from the implementation of the event will be 24,625 thousand rubles.
